Tofu instead of roast meat, lentils instead of bacon, vegetable broth instead of beef soup - the new vegan-vegetarian cooking apprenticeship is due to start on July 1. Prospective chefs will no longer have to pick up meat products. While many vegan restaurateurs and guests are happy about this, the new three-year apprenticeship does not only have fans.

"It's not going to be a big burner. In my opinion, we'll have to be happy if we get 15 apprentices together across Austria," says Gerold Royda. The head of the Upper Austrian Chamber of Commerce is also the federal training manager for tourism professions. Why does he expect demand for the new apprenticeship to be so low?
