“Vegetarian cooking apprenticeship is complete nonsense”

It's the big news: from fall 2025, it will be possible to train as a "vegetarian culinary specialist". The industry is seething. The "Krone" visited top Viennese restaurateur Herbert Hausmair in his restaurant - where he spoke plainly about what he thinks about it.  

"It's all hyped up and not thought through," says Herbert Hausmair as he ladles the hot beef soup over the warm potatoes for the lunch salad. "Yes," he says, "you make a real beef soup with beef. Even if our vegetarians don't want to admit it."
