This is because many Salzburg farmers are once again taking their cows to the mountain pastures. Sheep and goats are also often part of the party.

During the alpine summer, the grazing animals not only eat lush herbs, they also preserve valuable nature: by constantly grazing, they prevent the pastures from becoming overgrown with trees and shrubs - similar to the alpine farmer scything. Precious meadow flowers and the rare black grouse benefit from this. Both depend on open spaces to survive. Nature conservation by cow's mouth, so to speak. A pleasant side effect of the horned landscape conservationists: the open alpine meadows are ideal for hiking with the best views.

Above all, however, the grazing animals transform juicy alpine herbs into fresh milk. The dairymaids and dairymen process this milk into delicious alpine specialties.
