Market butcher wants to score points with “Linzer Wurst”

After Andreas Lackinger closed his stall on Linz's Südbahnhofmarkt last summer, the city council hoped to find a successor. Thanks to catering entrepreneur Philipp Kaufmann, this has now been achieved. The new market butcher will open on April 30, when the "Linzer Wurst" will be available for the first time.

Philipp Kaufmann is full of praise for the new market butcher Josef Fischelmaier, to whom he made the "Südi" appealing: "Josef supplies all of our restaurants. I like him because he is passionate about his business, is a perfectionist and the quality of his products is simply second to none."

Genuine, honest craftsmanship
The "Krone" was able to see the latter for itself during an inspection of Fischelmaier's delicatessen workshop. And it's true: in the hallowed Fischelmaier halls in Pabneukirchen, genuine craftsmanship is still a top priority - mass production by machine is a thing of the past. "We turn and tie each sausage by hand and give each piece a soul and our ambition to be a masterpiece of craftsmanship," says Fischelmaier.

Chef selects the meat himself
Only natural casings are used, except in the case of pork sticks, and no salt water is injected into the meat to add extra weight. Regionality is not just a nice-sounding phrase here: "For us, it's honest regionality," emphasizes Fischelmaier. His meat comes from small slaughterhouses within a radius of 15 kilometers. The meat is hand-picked, he selects it himself.

The counterpart to the "Linzer Torte"
On April 30, the market butcher's shop at Südbahnhofmarkt opens its doors. The new "Linzer sausage" will be available there for the first time. The "Krone" was allowed to taste Fischelmaier's special creation in advance. The Frankfurter-like sausage is impressive: it has a bite, is crunchy, tastes nutty but also slightly sweet.
