The Fungi Pad is a canvas for countless culinary creations and a real and healthy meat alternative that can be used to prepare almost anything. In the "Vegetarian Cooking" courses at the Viennese cooking salon Wrenkh, connoisseurs can now learn how to cut, chop, fry, cook ... In short: how to use it as a meat alternative.

Top chefs Karl and Leo Wrenkh have developed four new spring recipes with asparagus, wild garlic, root vegetables and wild herbs. The main ingredient of the Fungi Pad is the high-fiber king oyster mushroom, which the developers Thomas and Hermann Neuburger grow themselves in Upper Austria. It couldn't be more regional.

In keeping with the two company philosophies, participants can look forward to seasonal and regional organic recipes that are not only a treat for the palate, but also good for the environment. Because the Fungi Pad has only five natural ingredients: King oyster mushrooms, rice, organic egg, vegetable oil and spices.

In the new Fungi Pad recipes, the Wrenkh brothers focus on wild herbs such as nettle, root vegetables such as turnips and the spring classics asparagus and wild garlic:

  • Fungi Pad Terriyaki Style: Udon noodles with asparagus vegetables
  • Wild herb cuisine: Creamy nettle pad quinoa
  • Carbonara with a twist: Pasta with fresh wild garlic and crispy fungi pad
  • Springtime root delights: Roasted fungi pad on a turnip and potato puree

Cook a recipe exclusively at home nowAn Italian classic reinterpreted: Carbonara with a twist

INGREDIENTS (2 people)

  • 1 Fungi Pad
  • 400 g pasta
  • 120 g grated Parmesan cheese
  • 120 g wild garlic
  • 1 finely diced onion
  • 200 ml cream
  • 100 ml white wine, dry
  • 50 g butter
  • 10 g flour
  • Oil for frying
  • salt & pepper

PREPARATION

  1. Finely dice the fungi pad, fry in oil until crispy and set aside.
  2. Finely chop the wild garlic.
  3. Fry the onion in butter until translucent, dust with flour and deglaze with white wine. Add the cream.
  4. Cook the pasta until al dente, add to the sauce, stir in the Parmesan and Fungi Pad.
  5. Season to taste with salt, pepper and chopped wild garlic and serve with the remaining Parmesan.
